The Jimbo's Bar-B-Q logos center on the southern roots of Jimbo's, the top logo is definitely the best, the bottom was an early attempt in which I liked the font. I ended up making it a purely font based logo, with varying colors and slight size differences.

The assignment was to make a TYPOGRAPHICAL logo. Therefore both Jimbo's logos are ideal. Both are good ideas.
I like the top Jimbo's one, it's simple but I like it
Simple is good especially since this was supposed to be a Typographical logo
